A Year's Worth of Sweet Corn


Last year I canned three or four cases of sweet corn. This year I'll be canning, freezing and dehydrating my corn. I plan on processing twice as much as last year.  I don't grow the sweet corn, it takes a lot of garden space and this year's weather was so bad, I never did get it planted.  My husband used to plant sweet corn around his fields separating one crop from another, but *the help* cleaned us out the last year he grew it and he said *never again*.  We have a friend that has a really nice produce stand just outside of town on one of the main highways.  His little corn stand of 10 years ago is now a BIG FANCY building with a.c., soft drinks and all sorts of produce.  When I backed my truck up yesterday, you could hear the girls inside: "It's Mrs. Reynolds, she must be here for her corn!"  Not many folks around here still can...and certainly not the young high school/college age girls that take care of the produce stand...so I am an oddity.  I picked up three cases for this weekend,  that's about all I can process before I'm exhausted!  I'll  be putting more up later this week. Our corn season lasts until the end of October. I really don't know if we'll eat all of this corn...but, the financial columnist I follow stated Friday to not invest in precious metals, to take that money instead and buy FOOD.  I'm not kidding...I've been following this guy for about 25 years and that's the very first time he's ever said that...seriously.  My stomach did a flip-flop...like when you're on a roller coaster.  When he told people to invest in real estate: I did (successfully) when he said sell your real estate: I did (successfully) when he said buy precious metals: I did, when he said buy xyz stock: I did, when he said dump xyz stock: I did.  You don't have to tell me twice: I'm investing in Food...oh wait..that's something I already do.   What we don't eat or share, the chickens and pigs will love...no waste here.

A financial whiz said don't invest in gold?? To invest in food instead?? That's the most intelligent thing I've ever heard. I always wondered what folks with all that gold were going to do when there was no food to buy.

Good food is worth more than gold, and there's nothing nicer than homegrown.

I love your post on dehydrating corn kernells, now that something I could do. Next summer I will make a point and grow more corn.

What a harvest! There is nothing like fresh sweet corn. What variety(s) do you grow?

I've always tried to have at least a year's worth of food stocked up--that was drilled into me by my depression era mother. She said as long as the house is paid for and there is food to eat, you'll survive thru anything.

OK...Cough him up Linda. You can't TEASE us with his advise and not tell us where to go so we can read it too. (I happen to agree with him also.) Tangibles. That's what it's about. I can't eat gold.

Leigh: I was a bit surprised, but I've read the *food* advise from a number of economists in the last year.

Rina and Deb: In the past I've just used the dried corn in soup. It rehydrates very well and tastes great.

Mrs. Bok: I didn't grow this corn, so I don't know the variety. Years ago we grew the first Super Sweet for the Supermarket Trade (Raley's, Von's, Safeway).

Sue: My depression era Grandmother lived with us when I was growing up and she made sure we had a huge garden, she canned and we always had at least a year's worth of food stored in the basement. I have followed her path.

Robin: Three cases just about knocks my socks off. I'm going to give myself a bit of a break and then start up again. I had to do some sweet pickle relish early this a.m. and I noticed the tomatoes in my son's Heinz field are getting ready...the canning season has begun!

Love having stuff in the pantry that we can eat when things go south. And our own stuff is even better!

We still have corn from last year in the freezer and it's still good. I put up a few ears on the cob this summer. Not as much as you, though! :)
