Thumbprint Cookies
cream together 3 sticks of butter (1 1/2 cup) with 1 1/3 cups of sugar and 2 egg yolks
add a teaspoon of liquid flavoring/extract I used Vanilla in my first batch and
Fiori di Sicilia in my second batch (mmmmm)
Sift together 3 1/2 cups of all purpose flour (I use home ground hard white with a bit of rice flour)
add a teaspoon of baking powder and a teaspoon of fine salt....mix together and then add to the creamed butter/sugar mixer.
mix...making sure to scape the sides of the bowl
I'm a fan of parchment paper so I line my big cookie sheets, then spray with Pam (I have a homemade mix). I have a small cookie scoop and I make balls out of the dough, put them on the sheet and then press my thumb into the dough. I bake at 350 for 10-12 minute. Slightly browned on the edges. I put the baked cookies on newspaper or parchment and then before they cool I add about a 1/2 teaspoon of one of my homemade jams or jellys to the indentation.
one family favorite down...a dozen more to go!

This is a recipe for Alton Brown's "Better Than Pam":
1/2 cup corn oil or 1/2 cup canola oil or 1/2 cup vegetable oil
1/2 cup vegetable shortening , room temperature (Crisco shortening is good). I now use coconut oil (it firms at room temp)
1/2 cup all-purpose flour
Put all of this in a mixer and beat till fluffy...put in a jar and then use by applying with a paper towel to your cooking sheets and pans. You can keep store on the counter or cupboard or when it's warm in the fridge...good stuff.
OR you can make the spray Pam by combining: 1/2 c. oil
1/4 c. lecithin and putting the mixture in a spray bottle. I use a stainless steel MISTO...you pump it up and then spray.
Thank you for this! My mother used to make thumbprint cookies when I was a kid and I loved them. I can't blame you for doing less baking, I am too. I do make a batch of cookies each week though and save half a dozen or so. Christmas Eve we have a traditional supper of pepperoni bread and a variety of cookies for dessert! I need to add thumbprint cookies to my "to bake" list.
