Canning Potatoes

I harvested one of the 1/2 barrels of potatoes and decided to can about 5 pounds of them.  Last year I canned potatoes in quart jars and that was just too much for Bill and I.  This year I'll have more pints and just a few quarts.  I left the peels on, cut in half length wise, steamed for about 5 minutes, stuck in pint jars with a bit of salt, added boiling water, wiped jar rims, placed lids, put in the pressure canner, vented 10 minutes, put on weight, brought pressure up to 10 pounds and processed for 35 minutes.

I don't have a pressure canner so I made scalloped potatoes with my damage potatoes and froze them. I think that canned potatoes would come in handy.

I always freeze my veggies in appropriate size packages for the two of us. I never freeze by pints or quarts. There is no way that the two of us could eat that much. I also can a lot more pints of tomatoes then quarts. That way you don't waste.

I really should learn to can. I love my potatoes fresh, but let's face it, by February they are wrinkly and sprouty and not so good. This would be a great way for us to have decent potatoes in the late winter months.

I have not canned potatoes in a couple of years. I really ought to do at least one batch again because they are incredibly convenient on busy work nights to speed up the dinner prep process.

Your jars look great. I have yet to do any canning - only freezing so far. That will change later in the season.

Robin: I freeze quite a bit, too. I have a nice Food Saver and I really put it to use. Most often when I start to process anything I can a batch, freeze a batch and dehydrate a batch...that way, I have all my bases covered!

Sue: Do learn to can, it really is rewarding. It saves so much time and money to just go to the pantry and grab a couple jars and through together an amazing meal. My family has come to depend on all of my jars...they come and *shop* every Wednesday...right after Family Fun Dinner Night.

Terry: I don't know what I'd do if I had a potato crop failure! I plant at least 20 different varieties. I don't want to get caught in an potato famine!

I like that idea! Can a batch, freeze a batch and dehydrate a batch ... I'm going to borrow that one!
